Persimmon cookies

Ingredients
1 cup persimmon pulp
3/4 cup shortening
1 cup sugar
1 egg
1 tsp. baking soda
2 cups flour
1 tsp. baking powder
dash of salt
1 Tbsp. vanilla
1 tsp. cinnamon
3/4 cup chopped nuts
3/4 cup coconut
3/4 cup raisins (optional)
Method
Simply mix all the ingredients together well and drop onto a cookie sheet by the spoonful. Bake in a 350° oven for 15-20 minutes. These are even better on the second day… if there are any left.
